Paleo dinner
Last friday night I made the yummiest dinner. Roasted root vegetables (parsnips,sweet potatoes and carrots) cut into sticks tossed in olive oil and fresh herbs. Sauteed peppers and onions, stirfried brussel sprouts with onion, craisins and walnuts, drizzled with balsamic vinegar and honey.
Paleo breakfast
This morning I felt like ham and eggs. Generally you fry them in a pan but this is a fun way to prepare them and you can eat them with your hands. Great for eating on the run. The kids love them.

Simple Paleo snack
Looking for snack food today I discovered vegie chips. When I say I discovered, I’ve known about them but the Princesses facebook status was a reminder. Simple to do, delicious and super low calories. Get some vegies, zucchini, carrots, beets or sweet potatoes, slice them thinly, spray a cookie sheet with cooking spray.
