Paleo dinner

Last friday night I made the yummiest dinner. Roasted root vegetables (parsnips,sweet potatoes and carrots) cut into sticks tossed in olive oil and fresh herbs. Sauteed peppers and onions, stirfried brussel sprouts with onion, craisins and walnuts, drizzled with balsamic vinegar and honey. The King  grilled the steak. Total paleo meal, reasonably quick and easy to make.  I forgot to take pictures. DOH….. next time.

But here’s what you need:

2 carrots
2 parsnips
2 sweet potatoes
teaspoon fresh chopped herbs (whatever you have avail)
olive oil

Cut vegetables into sticks half inch thick, toss in oil and herbs, roast in oven approx 40 mins, turn occasionally to cook evenly.

10 Brussel sprouts
small onion
olive oil
1/2 cup walnuts
1/3 cup craisins
balsamic vinegar
honey

Cut brussels into thick slices, finely chop onion, saute both in olive oil until browned, crush walnuts, toss in with craisins. Mix balsamic vinegar and honey together and drizzle into pan. Stir to coat, serve. Season with sea salt and ground black pepper.

Peppers and onions are self explanatory 🙂
