Paleo breakfast

This morning I felt like ham and eggs. Generally you fry them in a pan but this is a fun way to prepare them and you can eat them with your hands. Great for eating on the run. The kids love them. You can cook them the night before and keep them in the fridge.
Pretty simple to do, spray a muffin tray with cooking spray or rub with oil, line each with a slice of deli ham cut in half long ways, crack egg into the ham. Cook in 380f oven until egg is cooked, about 15 mins.
