Sweet Coconut Pancakes


I felt like something sweet for breakfast because a girl can only eat so many eggs and came across this recipe from the civilized caveman. I added a little extra coconut milk to wet the batter a little more.

For a sweet pancake type experience you’ll need: 

1 cup shredded coconut
2 eggs
pinch of cinnamon
1 cup almond flour
1/4 cup coconut milk
1 tbs honey
serves 2

for the toppings you could use:

sliced banana
syrup or honey
or whatever takes your fancy.

I heated the cast iron plate and spooned on the batter, cooked for a couple of minutes then flipped. Just like pancakes 🙂

I topped it with sliced strawberries, blueberries and maple syrup. Super quick, easy and soooo yummy. It could also be a dessert if you wanted.

Update-I tried this again today and added some almond flour just to tone down the coconut. They were much better.
