Paleo Meatballs and a Secret Way to Feed the Kids Vegetables

If your house is anything like my house, you’re still finding ways to make sure the kids eat enough vegies. My kids aren’t too bad. They don’t love them but they’ll eat them if I insist. But I’m always looking for ways to trick them. You may think that’s bad but why have the fight if you can avoid it. There are plenty of battles you’ll fight with your kids, food doesn’t have to be one of them every day. Kids love meatballs right? Most kids like pasta sauce too, so why not make meatball and pasta sauce for them? Now of course I’ve put paleo in the title so I’m not going to tell you to feed them pasta but if you do the dish would still work.

So here’s the deal. I used turkey this time but you can use beef or veal or mix it. There’s no rules with meatballs. I make them with plenty of herbs, garlic powder pepper, spices and eggs. There’s plenty of meatball recipes around so just make whatever works for you. This dish is about the hidden vegies.

Line the bottom of a casserole dish with chopped cabbage and cover with grated carrots..

Season with salt and pepper. Place the meatballs on top of the base.

Meanwhile make the pasta sauce. You can do it fresh or you can use bottled sauce. Either would work fine. In fact I used both, spicing up the bottled sauce with some bacon, pepperoni, garlic and onions and a little extra tomato paste and some fire roasted tomatoes.

Once the sauce is cooked pour it over the meatballs and put in a slow oven for about 1 1/2 hours. That way the veges and meatballs will cook through nicely 🙂

After it’s cooked pull it out of the oven and let in sit for about 15 minutes otherwise it’ll be too hot for the kiddies. While it’s cooling you can sprinkle some cheese on it to melt in…

You can serve it with some crusty bread, if you’re not paleo or with a salad.
