This morning I felt like an egg change. I haven’t had poached eggs for a long time, so I set about making those. You know, water in pan, then eggs let them bubble until the yolk goes opaque. Some people put vinegar in the water, I’ve never done that. It doesn’t seem necessary. Though I could be wrong 🙂
Now eating poached eggs without toast is tough but of course toast is not paleo so I decided to top it with an avocado, tomato, onion salsa. This is a simple breakfast, quick and easy to make and very yummy.
The avocado I chose was a little brown in spots but still tasted good and the result is the same.
