I haven’t written about food for a while, but My Lord Doctor King is on a ‘lifestyle change’ (we don’t say diet) and has already dropped 14 lbs so I am cooking better again and using the paleo technique. Trying to find things that everyone loves can be difficult because Miss Gremlin isn’t a huge fan of vegies, she likes potatoes and sweet potatoes but not so many greens, although I’m working on her 🙂
Yesterday, feeling lazy, I went to pinterest to find something I could do without needing to leave the house, you know, with the ingredients I had here. We all know how hard that is, but I found something and it looked yummy and easy! My two favourite things.
Baked sweet potato spinach quiche. Yes real men eat quiche because they know not to complain! I found the recipe from this fine blog and here’s how mine turned out.
Firstly I lined the pyrex pie dish with thinly slices sweet potatoes and baked in oven for 15 mins on 400f.
While that was happening I sauteed onions and garlic and spinach, to the recipe I added mushrooms and ham because, my God, are we ever gonna finish eating the Christmas ham?
After they were nicely browned, I added the mix to the eggs and cheese and put it into the pie ‘crust’.
Reducing the heat to 375, I baked it for 40 minutes until the top was golden brown.
Super easy, incredibly yummy and a clever idea for those not eating pie crust!
I served it with shoestring sweet potato ( I had a little left over) and potato fries and steamed broccoli. They liked it!
Even Miss Gremlin.

Quiche is a big hit here. I often make it crustless because… well crust is a pain. I like the sweetpotato idea. Adding it to my list

That looks seriously good. Kevin eats quiche too, so you are correct; real men do eat quiche! My boys aren’t too convinced, however. I’m working on it. 😉 I love that you used sweet potatoes instead of crust. I’m trying this. Thanks for sharing!
